1 chicken cut into 8 to 10 pieces or fillet 1 egg 3 tablespoon corn flour 2 tablespoon cake flour 1 teaspoon red chilli paste Salt to taste ½ teaspoon garam masala ( optional ) 1 teaspoon crushed black pepper Oil for deep frying
For the sauce : In a non stick pan , add oil 1 teaspoon jeera seeds 1 teaspoon mustard seeds ( Rye (black seed) ) Handful Carry leaves 5 to 6 slices garlic cloves ( fresh ) if you do not have use crushes garlic 1 teaspoon grated fresh ginger ( 1 teaspoon fine ginger ) 1 teaspoon red chilli paste 2 slit green chillies 1 onion peeled open ¼ teaspoon red food color ( optional ) I did not use . 2 tablespoon cornflour 1 cup water 4 tablespoon chilli garlic sauce / chilli sauce 2 tablespoon soya sauce
wash cut and clean chicken . In a bowl add all 6 ingredients mix it well and add chicken mix well . Let this marinade for 1 hour atleast or leave it to marinade until just before serving . Deep fry this chicken until completely cooked and very crispy
Sauce : In a pan add oil let it get warm add the mustard seeds , jeera seeds and carry leaves and allow that to braise until the mustard seeds start to crackle now add the peeled pieces of onion , ginger garlic and red chillie paste , let this braise until onion is soft ,add food color , garlic chilli sauce and soya sauce , mix cornflour in 1 cup water and pour into the pot . Let this simmer until in thickens . Just before serving add crispy chicken to the sauce mix give it few tosses . Serve immediately .
