INGREDIENTS
¼ pound butter
3 eggs
¾ cup sugar
1 teaspoon vanilla essence
1 ½ cup flour
¾ cup milk
1 drop green colouring
3 teaspoon Baking powder
METHOD
Mix butter, sugar, eggs, vanilla essence, flour and milk all at once into kenwood bowl- Beat on high for 7 minutes, lastly add Baking powder and green colour mix on high for 1 minute...chop roughly ½ of 1 x 150g peppermint crisp slab..add more if u like .mix it with ¾ cup coconut...fold into cake batter...place in a greased round or ring pan..bake at 180 for ± 20 minutes
When cool...make a ganach by melting 1 slab diary milk chocolate,mix with ± 8 tablespoon nestle cream..pour over cake and top with grated peppermint crisp chocolate...
