INGREDIENTS
boil about 3 to 4 potatoes
Ground green chillies ( as strong as you like )
1 teaspoon garlic
¼ teaspoon haldi
1 teaspoon dhana powder
½ teaspoon haldi
Salt to taste
Handful finely chopped dhania (coriander)
3 to 4 tablespoon dhania (coriander)
Green chutney
½ bunch dhania (coriander)
Green chillies
Salt
2 tablespoon water ( add more if need be )
2 tablespoon lemon juice
2 teaspoon sugar
½ teaspoon jeera seeds
2 cloves garlic
Assemble :
Buns
Butter
Finely chopped red onion
Chutney of your choice ( I used an amli (tamerine) sauce )
Pomegranate seeds
Green chutney
Potatoes
sev (vermicelli) ( if you don't have use the lightly salted lays )
METHOD
boil potatoes and mash it .
In a small pot add alittle oil garlic , green chillies and all the spices braise until you can smell flavor add the potatoes and mix the spices in . Add lemon juice last . Set aside .
In a processor :
Add all green chutney ingredients And process until smooth liquid .
Assemble :
Cut open the bun , butter the outside of the bun, add I thick layer green chutney to the 1 side .
Add a thick layer of potatoes over that
Layer onions over .
Pour amli (tamerine) sauce over generously
Sprinkle a good amount of sev (vermicelli) and lastly a good amount of pomegranate seeds
Close bun and on a tAwa toast it ...
