125g butter
1 cup sugar
3 eggs
3 teaspoon baking powder
1 teaspoon vanilla essence
2 cups flour
1 cup milk
syrup :
1 cup water
1 cup apricot jam
red food colouring
coconut
METHOD
Beat the first 3 ingredients together until light and fluffy.
Add in vanilla essence, flour, baking powder and milk, mix well, grease cup cake pan and add enough batter in each pocket.
Pre-heat oven to 180 degrees, bake for 15-20 minutues or until done .
syrup :
Boil together the water and jam in a saucepan on medium heat, then add red food colouring ( add as much as u want ), set aside to cool
Once the syrup is cooled and cakes are baked dip each cup cake in syrup and roll in coconut. Ready to eat.
For the syrup, instead of the jam mixture you can use juice of your choice; orange, mango, peach, fruit cocktail. Boil a bit then add colouring if you want

You can also slit it open, dipnthe outside in jam, roll in coconut and sandwich with fresh cream.
