INGREDIENTS
1 kg Carrots
1ltr Milk
2 tablespoon. Semolina
+/- 250g Butter
+/- 1-2 Cups Brown Sugar (To Sweeten)
½-1tspn Elachi (cardomom) powder
Chopped Nuts (Almonds)
Yellow Colouring
METHOD
Grate carrots finely in a pot.Add milk and allow to boil until milk evaporates.In a separate pot melt butter and braise semolina,carefully,until light brown.Quickly add boiled carrots to the butter and semolina.Mix until well combined.Add in sugar,nuts and Elachi (cardomom).Lastly add enough yellow colour,until desired colour is achieved. Leave to steam.Serve Hot..
