INGREDIENTS
1 ½ cups flour
2 teaspoon baking powder
2 cups grated carrot
¾ cup oil
½ cup chopped nuts
1 cup castor sugar
½ teaspoon salt
3 eggs
1 teaspoon vanilla essence
½ teaspoon cinnamon
¼ teaspoon nutmeg
ICING:
60g cream cheese
30g butter
1 ½ cups icing sugar
METHOD
Sift flour and baking powder. Add oil and carrots and mix. Add in the rest of the ingredients and mix well. Bake on 180 in a greased pan and spread icing on cake when cooled. Decorate with pecan nuts.
