Wash soles and pat dry with a paper towel.
Season flour with salt, lemon pepper, fish spice, red chillies, Cajun spice, garlic flakes, parsley.
Pat soles in flour and shallow fry in a pan with olive oil and butter until golden on both sides. Serve with lemon butter sauce, chips and garlic toast.
LEMON BUTTER SAUCE:
Butter, fresh cream, lemon juice, salt and pepper.
Heat in microwave for 30 seconds.

Add lots of spice to the flour to ensure it's seasoned well and not bland when soles are fried.
