INGREDIENTS
1 cup cous cous (prepared according to box instructions)
Olive oil
½ chopped onion
1 chopped tomato
Cubed red, yellow and green peppers
Sliced button mushrooms (optional)
Salt/Coarse black pepper to taste
Robertsons Exotic Thai spice, Garlic & herb, Cayenne pepper
Red chilli powder
Chopped dhania (coriander)/parsley
METHOD
Saute onion in oil until softened, then add the rest of the ingredients. Stir fry on medium heat until tomatoes are cooked. Add into the cous cous and mix well. Garnish with dhania (coriander)/parsley.
INFO & TIPS
Goes well with chicken or steak or can be enjoyed on its own.
