INGREDIENTS
¼ grated pumpkin
¼ grated cucumber ( squeeze water out )
1 grated onion
Handful of chopped spring onion
2 tablespoon oil
Lot crushed green chillies (depends how strong u want it)
1 teaspoon arad (Turmeric)
4 teaspoon sugar
3 teaspoon somph
2 teaspoon dhana Jeeru (Cumin)
2 teaspoon dhana
Salt to taste
2 cups flour
¾ Chana flour
½ cup Rice flour
Fresh chopped dhania (coriander)
Water to form dough
1 teaspoon baking powder
METHOD
Add everything together to form a batter almost as a bhajia batter . Do not add the baking powder . At this stage you can freeze it . If you are not going to freeze add the baking powder .
In a non stick pan add oil . Add 1 tablespoon of batter flatten with bake of spoon . When you see bubbles forming you can flip and cook the other side ,this should be nice and crispy .
Note : if you are freezing , the day you decide to make pandelas ,make sure to defrost completely add more Chana flour and baking powder before frying as the batter would be abit runny .
