5 eggs, separated
Beat whites until stiff with a pinch of salt.
Beat yolks with 1 ½ cups sugar. Add ¾ cup boiling water & ¾ cup oil and beat on high so that eggs don't scramble. Add 1 teaspoon vanilla essence, 1 ½ cups flour, ¼ cup cocoa powder, 4 teaspoon baking powder and mix well. Fold in the egg whites. Pour mixture into a greased oven tray and bake at 180 degrees. When cooled, cut horizontally in half and sandwich the two pieces together with chocolate icing. Cut into blocks & freeze. Melt chocolate (you'll need quite a bit), dip blocks into it and leave to set in fridge. Drizzle with white chocolate.
