A very simple meal that takes literally minutes to put together yet tastes incredible.
200gm tube pasta of any kind
1 can of Tuna, drained (approximately 100gm)
2-3 fresh tomatoes, chopped
1 tablespoon. tomato sauce/ketchup
1 small onion, finely chopped
1 green chilli, chopped
1 tablespoon. oil
¼ cup water (optional)
¼ teaspoon. garlic paste
¼ teaspoon. ginger paste
½ teaspoon. black pepper powder
¼ teaspoon. cumin powder
juice of half a lemon
some chopped coriander
salt to taste
Boil the pasta as per packet directions and drain.
In the meantime, heat the oil in a pan, add the onions and fry until transluscent. Add the ginger, garlic and chopped tomatoes. Cook until the tomatoes are mushy. Add the cumin powder. Stir together then add the ketchup/sauce.
Next add the drained tuna and chopped green chilli. Mix well, making sure the tuna flakes apart and gets well-coated with the sauce. If you want the tuna mixture slightly saucy, add the water and mix, allow it to simmer for a couple of minutes.
Add the drained pasta. Sprinkle some chopped coriander and squeeze in the lemon juice. Give it a final stir and serve hot with a light sprinkle of black pepper powder and some extra lemon slices.
