INGREDIENTS
2 cups flour
2 tablespoon cornflour
3 teaspoon baking powder
125g butter
1 egg yolk
½ cup milk
TOPPING:
1 egg white
½ cup castor sugar
1 cup coconut
METHOD
Sift dry ingredients. Add butter to make like breadcrumbs. Beat egg yolk and milk together and add to flour mixture to make a soft dough. Roll and cut out with a daisy cutter and lay into a patty pan. Beat egg white and castor sugar until dissolved then mix the coconut. Put a teaspoonful of the topping onto each biscuit and bake in a pre heated oven on 180 until golden. When done, remove from oven and while it's still hot, using your finger or the back of a teaspoon, make a hole on the centre of the topping of each biscuits and add a drop of jam. Dust with icing sugar once cooled.
