INGREDIENTS
150g butter (melted)1 Β½ cups flour1 cup normal white sugar3 eggsΒ½ cup milkΒ½ teaspoon vanilla essence2 tspns baking powderΒΎ cup dessicated coconut
Topping:
3 tblspns apricot jamΒΌ cup dessicated coconut
METHOD
Preheat oven to 160Β°C.
Place coconut and milk in a bowl and set aside.
Beat eggs. Add sugar and beat until combined. Sift flour and baking powder into egg mixture. Add melted butter to combine. Add vanilla essence and fold in with coconut and milk.
Pour mixture into a 20cm round cake tin, greased and paper-lined.
Bake for approximately 35 to 40 minutes. Leave in tin for 10 minutes before turning onto a cooling rack.
Once cake is cooled, spread with smooth apricot jam and sprinkle with dessicated coconut.
