1 cup cooked chicken small pieces 1 cup grated cheese of your choice 2 cups flour 4 teaspoon baking powder ½ teaspoon salt ½ teaspoon parsley 1 teaspoon dhana powder 1 teaspoon zesty lemon and herb ½ dhopped onion 1 chopped red pepper Handful chopped spring onion Handful chopped dhania (coriander) 1 teaspoon ground green chilli 2 large eggs 1 cup milk ¼ cup buttermilk 100ml oil
2 blocks melrose cheese cut into small cubes Cream cheese spread of your choice
Pre heat oven to 180 degrees. Add all the dry ingredients to the flour , add all the chopped veggies to flour mix . Mix cooked chicken . In a Seperate bowl add milk , eggs , buttermilk , oil and ground green chillies and 1 cup grated cheese whisk all together . Add this mixture to the flour mix , mix until well combined
Add 1 tablespoon spoon batter to each muffin / cupcake tray . Add 1 piece melrose cheese in each as well as 1 dollop cream cheese spread then lastly add more batter ontop , make your its filled to the top
INFO & TIPS
If you do it have buttermilk just add 300ml milk and 1 tsp vinegar .
I suggest not to use the paper cupcake as the muffin will stick to it . Rather grease the tray and bake
