½ kg boneless mutton
1 teaspoon garlic
1 teaspoon red chilli paste
2 tablespoon Caribbean jerk spice
1 tablespoon BBQ spice
1 teaspoon sumac
4 tablespoon yogurt
1 tablespoon tomato paste
2 tablespoon lemon juice
1 onion cut into quarters and opened up
METHOD :
mix all the ingredients , add cubed mutton, place in zip lock bag and allow to marinade overnight or at least 3 hours .
place this in a pressure cooker with 1 glass water allow to soften .
place 1 cube cooked mutton alternate with onions . about 3 to 4 pieces a skewer .
now all the remaining water and marinade from pressure cooker add to a flat pan .
grill the skewers with some oil until nice and smokey . add this to the pan where you added remaining marinade with water , simmer and serve
