2 brinjals cubed 1 onion sliced ¼ cup ghee (Clarified butter) 1 teaspoon mix seeds 1 teaspoon packo masala 1 ½ teaspoon dana jeeru (cumin) 1 teaspoon mix masala Salt to taste ½ teaspoon arad (Turmeric) 4 tomatoes grated Green chillies Curry leaves Chopped dhania (coriander)
Heat ghee (Clarified butter) in pot. Add onions & mix seeds saute until golden brown. Add the packo masala & braise for few seconds. Put in the tomatoes & rest of spices. Cook for 2 minutes. Lastly add the cubed brinjals & cook until done. Garnish with dhania (coriander).
