1 french loaf cut out .
3 baby aubergine or 2 big
1 red pepper chopped
1 onion chopped
1 tablespoon crushed garlic
1⁄2 teaspoon ground green chili
1⁄4 cup freshly chopped parsley
1 /4 teaspoon crushed black pepper
salt to taste
optional - if you have left over fresh cream once the veggies are cooked you can add alittle for creamy taste
cut french loaf and place on a baking tray . drizzle olive oil and crisp alittle in the oven. ( if you do not like crisp bread do not heat )
In a pan add olive oil garlic and green chilli and saute . ad the aubergine , peppers ,onion and spices and stir fry for about 5 minutes . add 1 chopped tomato and cook until water burns out .
Add a spoonful of cooked veggies on each slice and serve immediately
