boil about 5 big potatoes to braise : 1 teaspoon jeera seeds 1 teaspoon garlic 1 teaspoon ground green chili ½ teaspoon red chili powder 1 ½ teaspoon dhana powder 1 tablespoon chaat masala salt to taste
franki roti : 2 cups flour ½ teaspoon salt 4 tablespoon oil hot water required to make soft dough
dhai : 250ml sour milk 1 teaspoon chaat masala 1 tso jeera powder 5 tablespoon sugar pinch salt
1 finely chopped red onion
optinal ; grated carrots freshly chopped green chili in vinegar sev (vermicelli)
boil potatoes and mash.
In a small pot add some oil and all the ingredients for potato and on low saute until you get the aroma . add mashed potatoes and mix well . allow to cook for 2 minutes remove from heat add 1 tablespoon flour and chopped dhania (coriander) and mix it .
when you ready to serve . take ¼ cup flour and 1 teaspoon chaat masala mix in a flat plate .
now that some cooked potato and form like a sausage shape and flatten .
heat up a tawa , add some oil . the mashed potato sausage that you made dip in the flour chaat mix and place on tawa add more oil if necessary . you can place as many as your tawa can fit . allow it to brown , turn and allow the other side to brown .
franki roti : add all ingredients make soft dough roll out rotis not big 1s . little bigger then a pita size ( this should be so thick) fry on tawa both sides lightly. set aside
dhai : mix everything together and whisk smooth .
Assemble : place roti down . add chopped onions place browned alloo tikka on onions pour dhai place garted carrots and vinegar chili ontop . close it up . now place on heated tawa and crisp . pour more dhai , garnish with onions and sev (vermicelli) and serve
