INGREDIENTS
1kg grated carrots
1 ½ litres milk
200g butter
2 tablespoon semolina
1 ½ teaspoon ground Elachi (cardomom)
1 cup sugar
1 tin nestle cream(155g
1 can Condensed milk(but add acc to taste)
¼ cup slivered pistachios
½ cup ground almonds
1 teaspoon yellow food colouring
METHOD
Boil the grated carrots and milk on medium heat while stirring occasionally to prevent scorching.Boil until most of the milk has been absorbed and carrots are thick and mushy.In a seperate pot,melt the butter,add the semolina,braise until light pink.Add the carrot mixture and remaining ingredients stirring vigorously.The halwa is done when it is fairly dry and ghee (Clarified butter) skims to the top.If I see it's not drying,I put it into a preheated oven at 180 degrees for about 15 minutes stirring occasionally.
