INGREDIENTS
Ingredients for the cake:
6 eggs
150g caster sugar
¼ teaspoon salt
175g self-raising flour
1 teaspoon vanilla essence
75g butter,melted
For the icing:
175g milk chocolate pieces
50g butter
175ml milk
200g icing sugar
50g cocoa powder
200g dessicated coconut to decorate
METHOD
Preheat oven to 180 degrees.Beat eggs,sugar and salt in a large bowl for about 6-8 minutes or until the mixture is thick and light.Sift in the flour and fold it into the batter,along with the vanilla and melted butter.Tip the mixture into a 20cm square tin which has been properly greased.Bake for 30 minutes or until a skewer inserted into the centre comes out clean.Remove from oven and leave to cool in the tin for 6 minutes before removing and putting it on a wire rack to cook completely.Meanwhile make the icing.Place a glass bowl above a pot of boiling water(don't let the water touch the glass bowl).In the bowl,put the chocolate,milk and butter.Stir gently until the chocolate and butter melt.Remove from heat.Sift together cocoa powder and icing sugar and whisk into the melted chocolate.Leave to cool.Cut the cooled cake into squares.Dip the cake into the chocolate mixture and finally roll in the coconut.
