INGREDIENTS
Dough
4 cups flour
1 Tab mixed herbs
1 teaspoon salt
125gr butter
1 packet dry instant yeast
3 Tab sugar
½ cup milk
½ cup boiling water
1 egg
1 small tin nestle cream
Filling
1 large onion
ghee (Clarified butter) (clarified butter)
3 cups chicken fillet cubed.
1 teaspoon salt
1 teaspoon black pepper,
1 teaspoon garlic
green chillies (acc to heat of your choice)
1-2 tomatoes grated
After 5 minutes add one or two tomatoes
2 grated carrots
1 cubed green pepper
1 punnet mushrooms
1 /4 cup milk
1 Tab maizena (corn flour)
METHOD
Dough
In a dish sift all dry ingredients. Rub butter into flour mix to resemble breadcrumbs.
Mix the last four ingredients together and then add to flour
mixture to form soft dough.
Allow to rise in a warm place 2 hours. Once risen punch down and form small
balls an roll into rounds
Filling
Saute onion in ghee (Clarified butter), add chicken fillet, salt, pepper, chilli and garlic. Cook for 5 minutes then add tomatoes. Cook until done.
In a pan stir-fry carrots pepper and mushroom in some oil about 5-10 minutes. Make a paste with milk and maziena add to stirfry and cook for a few more minutes until thick and saucy. Once done add stirfry to cooked chicken. Mix well and add dhania (coriander) . Once mixture is cool place a tablespoonful of filling in the centre of each calzone round an then cheese on top of each round. Close like half moon. Brush tops with beaten egg and sprinkle with sesame or poppy seeds. Bake on 180C until a beautiful golden shade.
