INGREDIENTS
1 kg chicken mince / steak / mutton mince 1 tablespoon garlic 1 teaspoon ginger 1 teaspoon ground green chili2 onions finely chopped 1 tablespoon chicken spice 1 tablespoon bbq spice ½ teaspoon lemon pepper1 teaspoon sumac (optional)¼ teaspoon haldi salt to taste ( chicken and bbq spice is salty so taste )squeeze half a fresh lemon ½ cup chopped dhania (coriander) ½ cup chopped mint handful of bread crumbs ( not the cornflakes )
Tahini sauce :take ½ cup mustard seeds olive oil 1 cup plain or Greek yogurt some water
Assemble :flat bread / pita bread tahini sauce 1 big onion or 2 small 1 tablespoon sumac add the sumac to the onions and give it a toss until well coated
2 tomatoes slice them thick . when you done grilling kebabs or while grilling kebab . place tomatoes to grill and soften as well
hummus or baba ganoush as side dip or to layer on kofta
METHOD
Add all the ingredients to the mince and mix nicely until everything is well incorporated . make long kebabs and flatten . place in a non stick pot or pan .If you are not using all the mince place in a zip-lock and freeze .
Add some oil and a blob of butter with ¼ cup of water and cook on low heat until almost done . when you are ready to serve using a indoor griller place all the semi steamed kebabs and grill on medium heat until nice and smokey . squeeze some lemon on it .
Tahini sauce :Place sesame seeds in a non stick pan and roast until brown . remove from heat allow to cook slightly . add this to a food processor and process until smooth , start adding olive oil to this to form a paste ,Now in a bowl add the yogurt and some water to make it runny add 1 tablespoon of the tahini paste and mix well or blitz in food processor if you prefer . store the remaining tahini paste in a freezer .
Assemble :Place flat bread at the bottom spread hummus or baba ganoush ( optional ) place grilled tomatoes on top of that place 2 grilled kebabs on the tomatoes .Top with a good amount of sumac onions . Pour a good amount of tahini sauce over ,garnish with some dhania (coriander) , serve immediately
INFO & TIPS
if you do not like the taste of tahini sauce you can make tzakziki and pour that over instead .
its just as good .
