Phirni (Soft Semolina Dessert) Recipe credit: @mama_taught_me_wellPic credit: Ruhana Ebrahim Ingredients:1 litre full cream milk,1 egg (optional)2 tablespoon maizena (corn flour) (mixed in some of the cold milk),¼ cup semolina,2 Tablespoon ground badaam (almonds),1 teaspoon elachie (cardamom) powder,1 small tin Nestle dessert cream,½ - 1 tin condensed milk (to taste),Sugar (to taste),Rose essence/water (to taste),Pink food colouring (few drops to make a pale pink colour). Garnish:Sliced Badaam or pistachios Note: You can use store bought Rose Syrup or Rose elachie syrup for color and flavor too. METHOD1. In a deep pot, pour in the milk and bring to heat. (Take out some milk to mix maizena (corn flour) in).2. In a separate bowl, beat the egg with semolina, ground badaam and maizena (corn flour) milk mix.3. Add to heated milk, and bring to boil, stirring continuously.4. Remove from heat when mixture bubbles.5. Add remainder of ingredients, mixing well. Pour into a serving bowl or individual bowls.6. Allow to chill in refrigerator completely and set.7. When chilled, sprinkle on badaams/pistas, and serve cold with dessert spoon. Note: If it has thickened too much, add a splash of cold milk to it and mix in before garnishing. May use sugar (to taste) instead of condensed milk.
