1 packet tennis biscuits crushed
125 grams butter melted
1 tin condensed milk
1⁄2 cup lemon juice
3 eggs seperated
1⁄2 cup castor sugar
1 teaspoon meringue powder
Combine crushed biscuits and melted butter. Press into pie dish.
Leave in fridge for 15 minutes then...
Whisk together condensed milk, lemon juice, and egg yolks till well combined then Pour into Tennis biscuit mix and leave in the fridge
Beat egg whites until stiff, gradually adding castor sugar,and lastly adding meringue powder to the egg whites ...(makes it glossy and more stable )decorate meringue on top of filling.
Bake on 140 for 25 minutes or until lightly browned. Once done leave it out of the oven ..therafter u can chill it ..
