4 eggs1 cup castor sugar1 teaspoon peppermint essence1 cup flour2 teaspoon baking powder2 tablespoons maizena (corn flour)½ cup oil½ cup boiling water¼ teaspoon green colouring
Choc ganache½ cup nestle cream1 slab dairymilk chocolateChoc vermicelli/ peppermint crisp grated/ aero mint curls
METHOD
Beat together eggs, sugar and essence.
Add in dry ingredients and beat.
Add in wet ingredients and beat.
Bake in greased and lined pan at 180 deg C for 30-40min.
Heat cream and chocolate together.
Spread on cake and sprinkle choc vermicelli. Decorate as desired.
