INGREDIENTS
1 cup self-raising flour1 pinch salt¾ cup sugar1 cup coconut125 g butter melted½ cup milk2 egg1 teaspoon vanilla extract
For Icing1 heaped cup icing sugar1Tbs butter2Tbs boiling water (add slowly )1 drop pink liquid food colouring
METHOD
1. Put flour, salt, sugar, coconut and melted butter in a bowl. Mix well.2. Stir in beaten eggs, milk and vanilla.3. Spread mixture into a greased tray and bake at 180C for 25-30 minutes.
Icing4. Place icing sugar andbutter in a bowl. Pour in enough boiling water to make a thick paste.5. Add a drop of food colouring and sprinkle with coconut.I greased and lined a oven proof glass rectangular dish then spread mixture in, let the cake cool then spread icing and sprinkle coconut, slice into squares and enjoy
