INGREDIENTS

-ready made croissant dough or shortcrust pastry
Coconut filling ingredients:
-1⁄2 cup (120g) milk
-1⁄2 cup (100g) sugar
-2 1⁄2 cups (220g) sweetened coconut
-1 teaspoon (4g) vanilla extract
Glazed icing ingredients:
-1 ½ cups icing sugar sifted to remove any lumps
-3 to 4 big tablespoons milk or water
-Sliced pista (pistachio nuts) to decorate
METHOD
Coconut filling:
1.)heat a saucepan on medium heat add the milk and sugar. Stir until the sugar is dissolved. Stir continuously...It is a slow process because you don't want the milk to boil. Stir in the coconut and vanilla extract. Allow to cool completely. It will thicken as it cools. It can be made in advance and refrigerated.
Coissants:
1.)cut dough/pastry in triangles - place coconut filling on the dough/pastry and roll as croissants.
2.)bake in a preheated oven (200degrees) till golden brown.
-Leave to cool then decorate.
Glaze icing:
1.)Place the sugar in a medium bowl and slowly stir in the milk or water a little at a time, to make a smooth, pourable icing.
-Drizzle icing over the croissants and decorate with sliced pista (pistachio nuts).
