INGREDIENTS
2-4 Boneless, Skinless Chicken Breasts
⅓ cup extra virgin olive oil(I used a bit less)
3 garlic cloves, minced
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons finely chopped fresh parsley
½ teaspoon finely chopped fresh thyme
½ teaspoon finely chopped fresh oregano
¼ teaspoon finely chopped fresh rosemary
3 tablespoons lemon juice
METHOD
DIRECTIONS
Place chicken breasts on a chopping board, using a meat mallet, pound out to an even ½-inch thickness.
Place chicken in a large bowl and mix in all ingredients. Massage well into chicken . Cover and allow to marinate for at least and hour in the fridge.
Preheat a grill pan on medium heat. Place chicken directly on grill and cook for 5 minutes; flip and cook for another 5 minutes until cooked to your liking.
*TIP*A mixture of 2 ½ teaspoons (total) dried Italian herbs can be substituted for the fresh. To give it some kick, you could add crushed red pepper flakes. And to add some tang, whisk in a few teaspoons of mustard!
