Stuffed Mushroom Roll Casserole Pic cred: Ruhana EbrahimRec cred: @mama_taught_me_well Ingredients:1 dzn mini hot dog rolls. 1 punnet button mushrooms (sliced)1 tablespoon crushed garlic½ teaspoon lemon pepper½ teaspoon saltDash lemon juiceDrizzle oil/ butterPinch dried mixed herbs250ml fresh cream1 teaspoon ground green chillies1 tin creamstyle sweetcorn½ teaspoon dhana Jeeru (Cumin)½ teaspoon saltDash white pepper Grated cheese (of choice)Chives (chopped).
1. Heat oil/ butter in pan. Add garlic and saute with spices. 2. Add mushrooms and lemon juice. Toss well and allow to cook until tender and no liquid remains. 3. Slit rolls lengthwise and lay in an oven proof dish. 4. Spoon in sauteed mushrooms. 5. In a saucepan add fresh cream, chillies, spices and corn, bring to boil and allow to thicken. 6. Pour sauce over mushroom stuffed rolls. 7. Sprinkle cheese and chives and melt in hot oven. Serve hot.
