INGREDIENTS
250g butter
¼ cups oil
1 cup brown sugar
1 teaspoon bicarbonate of soda
1 cup dessicated coconut
1 cup currents
Flour to make dough +/- 2 ½ cups
METHOD
Cream butter, sugar & oil.
Add in coconut and currents and mix.
Add sifted flour and bicarbonate of soda.
Drop teaspoon fulls onto greased baking sheets.
Bake in a preheated oven at 180°c till golden.
Dust with icing sugar or drizzle melted chocolate over.
