125ml boiling water
5ml vanilla essence
10ml grated orange rind
3 extra large eggs separated
180g castor sugar
7,5ml baking powder
20ml each cornflour and cocoa powder
5 - 10ml coffee granules
Mix water oil and vanilla together
Beat egg yolk, sugar and rind for 12 minutes. Add the oil mixture and beat until smooth.
Meanwhile beat the egg whites stiff. Sieve the dry ingredients over the egg yolk mixture stir until blended.
Gently fold egg whites and pour batter into a prepared 20cm cake tin.
Bake on 180 deg for 45 minutes or until a skewer inserted comes out clean.
Once baked remove and place onto a wire rack to cool.
Place nuts on top of cake
Prepare the sauce
In a saucepan place all ingredients except for almonds, stir until sugar dissolve, boilt until thick.
Allow to cool and throw over cooled cake.
