Caramel Cream Cupcakes

RECIPE

½ cup oil
1 cup castor sugar
Mix together
Add 4 eggs
2 at a time
1 tablespoon vanilla
Beat well then add
1 cup flour
2 teaspoon baking powder
Add and mix very well
Slowly add in ½ cup boiling water and lightly mix
Add to cup cake cases
Bake in a preheated oven at 180 for 10-15 minutes
Beat 1
1 tub (250ml)fresh cream/imatation cream with half tin caramel treat till stiff
Add quater teaspoon caramel essence
Pipe ontop of cuppies..place a teaspoon o granadilla pulp that has been mixed with apricot jam in the centre..top with half a pecan/almond..sprinkle dessicated coconut around cuppie on cream
