Red Velvet Dessert
Red velvet Cake :1 cup oil 1 ½ cups buttermilk 1 teaspoon vanilla essence 1 teaspoon vinegar1 bottle red food color 2 eggs Beat the above together
2 ¼ cup flour 1 ½ cups sugar 1 teaspoon cocoa 1 teaspoon bicarb of soda ¼ teaspoon salt Sift dry ingredients Add little at a time to wet ingredients beat until well combined. Line a cupcake pan with cases, fill half way bake on 180 deg 15 - 20 minutes.
Filling :500ml fresh cream 1 tin condense milk 250g cream cheese plain ⅓ cup lemon juice
Beat fresh cream stiff. Combine the condensed milk, cream cheese and lemon juice.Fold in with the whip cream.
Assemble :(Remove cakes from the cases. Cut each cupcake in half, using a round cutter cut circles. Keep remaining cake to decorate.) Layer at the bottom of individual cups some of the cream cheese filling, place a piece of cake over this pipe more filling over the cake. Repeat this ending with a cream cheese layer. Sprinkle cake crumbs or decorate as desired.
