INGREDIENTS
250 g macaroni- boil in salted water with a drop of coconut oil till al dente. Drain and mix in 2 tablespoon mayonnaise.
6 medium potatoes - boiled and mushed.
½ onion finely sliced
1 spoon coconut oil
½ green pepper, cubed
1 ½ teaspoon crushed garlic
1 teaspoon crushed green chillies
Salt and pepper
2tblsp lemon juice
⅛ cup sourmilk
1 can creamstyle sweetcorn
Grated cheddar cheese
METHOD
In a big oven pan/ pyrex bowl, layer the macaroni. Thereafter saute the onion in the coconut oil. Add the peppers, green chillies and garlic and braise. Then add the salt, pepper and lemon juice. Add in the mushed potatoes and the sourmilk. Mix well.
Layer the potato mixture over the macaroni.
Pour the can of sweetcorn over the potato mixture. Sprinkle a generous amount of cheese over the sweetcorn. Garnish with cubed tomatoes and parsley. Warm in the oven till heated through
