1kg Mutton pieces
2 onions chopped
2 cloves garlic crushed
2 teaspoon fresh ginger
3-4 cardamon pods
3 tablespoon flour
1 tablespoon each :
Dried thyme & origanum
1 red chilli Seeded and chopped
1 tablespoon tomato paste
2 x 400g whole peeled tomatoes or 1 kg ripe tomatoes skinned and chopped
2 teaspoon sugar
3 potatoes peeled and cubed
Salt & pepper to taste
Braise Mutton pieces in a pot on medium heat. Set aside Saute onion in the remaining fat. Add garlic, ginger, coriander, herbs and chilli. Saute then add flour. Stir well.
Add the tomato paste, tomatoes and sugar. Give a boil over medium heat. Add meat stir reduce heat to simmer. Don't boil.
Gently stir to prevent from sticking to the bottom.
Simmer with lid on for 1 hour. Add potatoes and simmer for another hour until meat an potatoes tender.
Serve with rice, samp, Naan or Roti
