1 kg red fish or any other
Sprinkle with salt and 2 tablespoon lemon juice
3 medium tomatoes
1 heaped tablespoon ginger and garlic
1 teaspoon arad (Turmeric)
1 ½ teaspoon ground jeeru (cumin)
Handful dhania (coriander)
¼ cup water
Liquidize all of the above. Add to fish. Allow to marinate for an hour.
1 tin coconut milk
Frozen mix veg
2 cups basmati rice
2 cups or more water
Remove fish from marinade, set aside.
In a pot add the leftover marinade, coconut milk , rice and water. Cook until rice is half way done. Stir occasionally to ensure it does not stick to the bottom of the pot. Add more water if necessary. Lastly add the fish, cover with lid and steam for 10 - 15 minutes until fish is done.
