Mutton Curry

Ingredients:1 large onion (sliced)5 cardamom pods2 cinnamon sticks¼ teaspoon cumin seeds3 cloves2 star anise2 bay leaves1kg mutton curry pieces1 large tablespoon red ginger garlic masala1 tablespoon brown vinegar1 teaspoon mustard powder2 teaspoon coriander powder2 teaspoon cumin powder1 ¼ teaspoon salt¼ teaspoon turmeric powder1 teaspoon chilli powder4 large tomatoes (liquidized)40g sachet tomato paste 4 large potatoes (cut in halves or quarters)1 ½ cups waterChopped coriander
METHOD1. Braise onion with oil, whole spices and bay leaves until golden. 2. Add powdered spices, chilli, ginger, garlic and vinegar and braise until fragrant. 3. Add in mutton and coat well. 4. Cook until mutton is tender, adding water as needed.5. Fry potatoes until crispy and golden outside and soft inside.6. Add tomatoes and tomato paste and cook until reduced.7. Add in fried potatoes, half the coriander and water to make a gravy. Cook until gravy consistency desired is reached.8. Note: You may add about 6 baby marrow (grated fine) to add extra flavor and as a thickener for the gravy.This gives it more of a degh curry taste.
