INGREDIENTS
Mince biryani:1 kg mince,2 cups either
chana dhal,Masoor (Back lentils),fresh peas or
toovar,2
cups rice boiled and draind when half
done,boil any dhal till nearly
done,drain
dry,2 small onions,quarter teaspoon
turmeric,half cup yogurt,1 teaspoon pounded
red chillies,2 whole green
chillies,half
teaspoon dhania (coriander) jeera powder,a few potatoes
fried ,quarter teaspoon saffron,quarter teaspoon
grated tomato,lemon juice 2 tablespoon ,salt
taste,1 teaspoon ginger/garlic,1 cup
oil,three
quarter teaspoon whole
jeera....METHOD:braise
mince with garlic/ginger,salt,pounded
chillies and dhania (coriander) jeera powder.when
dry,remove from stove and cool.now add
the saffron,yogurt,grated tomato,lemon
juice and whole jeera.add few
Elachi (cardomom) ,tuj (cinnamon stick)
and cloves.fry onions in oil and remove
when light golden drain oil and when
cool
crush and add to mince.put left over
oil
in pot sprinkle little rice and and
Masoor (Back lentils) over oil.
METHOD
now distribute the mince over floor of
pot.place potatoes over mince,then
Masoor (Back lentils)
or dhals,lastly add rice to cover
all.sprinkle some fries onions and a
few
tablspoons ghee (Clarified butter) add little cold water
steam gently in 180 degrees oven till
done (30-45 minutes)
