1 whole Chicken butterflied washed & cleaned
Make a paste with:
4 cloves crushed garlic
1 teaspoon crushed sea salt
1⁄2 teaspoon crushed peppercorns
1 teaspoon chicken spice
1 teaspoon lemon pepper
Fresh or dried thyme
Juice of 1⁄2 lemon
3 tablespoon melted butter
Marinate chicken with above for a few hours
Take one large red onion & cut into wedges
3 carrots cut into thick rounds, 2 sweet potatoes cut in to chunks & about 6 baby potatoes
Melt some butter in a large heavy based pot, a slow cooker could be used if available
Place carrots & onions at the bottom, place chicken on top of them. Cook on low for approximately 1hr. Then add sweet potatoes & potatoes. Cook further for another 45 minutues.
Take out some of the liquid from the pot & place in saucepan, add 2 tablespoon of brown onion soup & 2 teaspoon of Ina paarmans chicken stock, add 1⁄2 cup of water & 2 tablespoon of butter. Boil on stove & pour over chicken just before serving. Enjoy!
