Stuffed Mince Bell Pepper Curry Pic cred: Ruhana EbrahimRec cred: @mama_taught_me_well Ingredients:1 onion (sliced)1 piece taj (cinnamon stick)2 tablespoon oil500g beef/mutton mince1 ½ teaspoon red ginger garlic masala1 teaspoon chilli powder1 teaspoon dhana jeeroo powder¾ teaspoon saltPinch turmeric powder1 teaspoon mustard powder1 tablespoon brown vinegar2 tomatoes (liquidized)3 small green bell peppers
1. Braise onion with taj until lightly golden. 2. Add spices and masala, braise till fragrant. 3 Add washed and drained mince, with mustard and vinegar. Mix well. 4. Cook until no liquid remains and well braised. 5. Add in tomatoes. Cook till half tomato liquid has reduced. 6. Cut off tops of peppers. Scoop out seeds.7. Rinse and stuff with some of mince. Cover pepper with it's top. 8. Place in remainder mince adding ½ cup water to pot.9. Cook until peppers are soft and liquid has cooked out. 10. Add more water as needed. Serve with roti.
