INGREDIENTS
For the Cake:
5 eggs
250ml oil
500ml castor sugar
2 teaspoon vanilla essence
500ml cake flour
4 slightly heaped teaspoon baking powder
300ml milk
For the Glaze:
100g icing sugar
2-2 ½ tablespoon milk
*If adding essence (lemon, almond, vanilla, etc) add less milk
METHOD
Beat together eggs, oil and milk until mixture is light and fluffy
Then add the rest of the ingredients for the cake and beat till combined
Pour batter into a large square or rectangle baking tin and bake at 180 for about 25-35 minutes or until completely golden and cooked
Once cooled, cut into squares and dust with icing sugar or make the glass by whisking the icing sugar and milk together and drizzle over the squares and sprinkle with toasted almonds or pistachios
