Ingredients: 5 large tomatoes 3 sweet palermo peppers ¼ cup oil 2 large onions (sliced) 3 tablespoon crushed garlic 1 tablespoon red chilli paste 1 teaspoon salt 1 teaspoon cumin powder 1 teaspoon chilli powder ½ teaspoon black pepper powder 1 tablespoon lemon juice 2 tablespoon tomato paste 1 teaspoon sugar 1 tablespoon italian seasoning
In a deep pot braise onions in oil till lightly golden. Wash and slice peppers in half lengthwise. Deseed and drizzle with oil. Roast in oven till tender and slightly charred. Liquidize tomatoes. Add roasted peppers and onions to tomatoes along with remainder ingredients. Blend till smooth. Add liquid back to pot and cook for 1 hour on medium heat till reduced and thickened.
This sauce is ideal for pastas, pizzas, basting sauce for fish/meat, meatballs etc. To make it lighter, add cream to it and heat together.
