RECIPE
White Sauce Chicken Pasta

INGREDIENTS:500g pasta of choice500g chicken fillet (stripped/cubed)2 tablespoon oil1 teaspoon ground green chillies1 tablespoon garlic paste1 teaspoon fine salt (to taste)1 teaspoon lemon pepper1 teaspoon coriander powder1 teaspoon cumin powder1 teaspoon dried oregano1 tablespoon lemon juice3 carrots julienned/grated2 cups frozen corn1 green pepper (julienned)(Optional-sliced mushrooms)
Sauce-60g butter1 liter milk¼ cup flourSalt and pepper
Garnish-Dried mixed herbsFreshly cracked black pepper
METHOD:1. Heat oil in a pan, add in garlic, chillies, spices, lemon, chicken & veg and cook until chicken is just done.2. Boil pasta in oiled and salted water until al-dente. Leave aside with 1 ladle of pasta water.3. For the sauce, melt the butter.4. Whisk in the flour. Gradually pour in milk, whisking all the time, till a smooth paste.5. Pour in remainder milk, whisk together and allow to come to a simmer and thicken. 6. Once the sauce has thickened, season with salt and pepper.7. Add the boiled pasta, cooked chicken & veg & pasta water to the sauce. 8. Mix well and heat together.9. Garnish with black pepper & herbs.10. May add cheese ontop and pop in the oven to melt. Note: Make sure your pasta is al-dente so that when heating together with sauce is does not over cook & break apart. #mamataughtmewellrecipes
