1 large pepper (cut in half, deseeded)
6 tablespoon cooked lean beef mince
1 cup marinara sauce
2 eggs (room temp.)
Preheat oven to 200degC.
Wash pepper and steam until just tender.
Place in oven proof dish.
Spoon in mince into pepper.
Spoon 1 tablespoon marinara sauce over mince.
Pour remainder sauce around peppers.
Crack egg into each half.
Sprinkle salt and pepper over eggs.
Place in oven for 5-10min to bake (or how well you like egg done).
