RUHANA EBRAHIM'S RECIPES

INGREDIENTS

Ingredients:
2 large peppers (cut in half, deseeded)
1 small orange flesh sweet potato
Salt, chilli powder, butter
1 red onion
2 tablespoon balsamic vinegar
1⁄2 teaspoon honey
1⁄2 cup marinara sauce
4 eggs (room temp.)


METHOD

Preheat oven to 200degC.
Wash pepper and steam until just tender.
Place in oven proof dish.
Bake sweet potato till tender, peel, mash and season with salt, chilli powder and butter.
Spoon into peppers.
Slice onion and saute till soft. Add balsamic and honey and caramelize.
Spoon into peppers.
Pour sauce around peppers.
Crack eggs into peppers.
Sprinkle salt and pepper over eggs.
Place in oven for 5-10min to bake (or how well you like egg done).
