2 large peppers (cut in half, deseeded)1 small orange flesh sweet potatoSalt, chilli powder, butter1 red onion2 tablespoon balsamic vinegar½ teaspoon honey½ cup marinara sauce4 eggs (room temp.)
Preheat oven to 200degC.Wash pepper and steam until just tender.Place in oven proof dish.Bake sweet potato till tender, peel, mash and season with salt, chilli powder and butter.Spoon into peppers.Slice onion and saute till soft. Add balsamic and honey and caramelize.Spoon into peppers.Pour sauce around peppers.Crack eggs into peppers.Sprinkle salt and pepper over eggs.Place in oven for 5-10 minutes to bake (or how well you like egg done).
