Red Velvet Sojee (semolina flour)

½ cup solid ghee (Clarified butter)
1 cup semolina
1 cup boiling water
250ml fresh cream
½ can condensed milk
sugar (to taste)
2 teaspoon cocoa powder dissolved in little hot water
Maroon gel colouring
Fresh cream (whipped)
Heat ghee (Clarified butter). Braise semolina, then add water and remove from heat. Mix in till swollen.
Mix half of cream, egg, sugar, cocoa mixture and condensed milk.
Pour into pot and mix in well, removing any lumps.
Cook on low till half reduced. Add in few dots colouring and remainder fresh cream and mix in.
Increase heat and cook till fluffy.
Optional idea to decorate:
Whip fresh cream till soft peaks, spoon over cooled Sojee (semolina flour) and crush flake over.
