Mexican Pasta Salad

INGREDIENTS

3 cups trio pasta, boil in salt water al dente, drain set aside.
1 cup sweet corn, Saute in a pan ½ red onion chopped ½ each Red and green peppers cubed Spring onions BBQ big corn bites
Dressing 250ml sour cream 1 cup spicey salsa ¼ cup mayonnaise Salt and pepper to taste 1 clove garlic minced ½ teaspoon cumin

METHOD

Mix dressing ingredients together.
Add corn, onion, peppers and spring onions to pasta then add the dressing and gently mix in. Add big corn bites just before serving.
