Steak Fajita Roll Ups Pic cred: Ruhana EbrahimRec cred: @mama_taught_me_well Ingredients:1kg topside steak (tenderized) Filling-1 tablespoon oil1 large onion (thickly sliced)1 tablespoon ground garlic paste¼ teaspoon salt½ green bell pepper (julienned)½ red bell pepper (julienned)½ yellow bell pepper (julienned)½ cup grated white cheese of choice (optional) Marinade:2 teaspoon chilli powder1 teaspoon dhana jeeroo powder½ teaspoon salt½ teaspoon white pepper½ teaspoon garlic powder½ teaspoon onion powder½ teaspoon dried oregano1 tablespoon oil1 tablespoon Worcestershire sauce Balsamic Glaze-1 tablespoon butter2 tablespoon finely chopped shallots¼ cup balsamic vinegar2 tablespoon brown sugar¼ cup water(Alternatively you can use a store bought BBQ sauce of choice) Method:1. Saute onion and peppers for 3min in oil. Leave aside.2. Rub marinade onto steak.3. Place sauted veg onto steak, sprinkle cheese, and roll tight like a swiss roll. Push skewers through.4. Heat a pan with a drizzle of oil. Brown roll ups on both sides.5. In a saucepan, melt butter and saute shallots.6. Add in vinegar, water and sugar and reduce sauce till half, when it has become sticky.7. Brush the roll ups with balsamic glaze (or BBQ sauce).8. Place in preheated oven at 180°C and bake for 10min. 9. Remove from oven and serve.10. Slice into smaller pieces if desired.
