Mocha Cake

INGREDIENTS

125g butter
200ml castor sugar
3 eggs
2 cups cake flour
pinch of salt
2ml vanilla
2ml ground cinnamon
20ml instant coffee powder
200ml milk
15ml baking powder
165ml cornflour

METHOD

Cream butter & sugar well. Beat in
eggs one by one. Sift all the dry
ingredients together. Add to creamed
mxture, alternating with the milk. Stir
in vanilla. Pour into 2 sandwich pans.
Bake @ 180*C for 25 minutes. Leave to
cool. Sandwich together & ice with
coffee icing.
