1 cup icing sugar
¼ cup oil
1 teaspoon vanilla essence
1 cup corn flour
2 cups desiccated coconut
2 cups flour
1 teaspoon baking powder
1. Cream butter and sugar well.
2. Add oil ,vanilla and corn flour and beat.
3. Mix in coconut.
4. Lastly add sifted flour and baking powder ( add more flour if needed to make firm dough ) 5. Make into 4 logs, cut slices and place on baking tray or roll out, scape with a fork, cut as desired and decorate with 100s and 1000s.
6. Bake at 140 deg for about 15min until lightly brown.
