Ingredients 250g butter 1 cup icing sugar ¼ cup oil 1 teaspoon vanilla essence 1 cup corn flour 2 cups desiccated coconut 2 cups flour 1 teaspoon baking powder
Method 1. Cream butter and sugar well. 2. Add oil ,vanilla and corn flour and beat. 3. Mix in coconut. 4. Lastly add sifted flour and baking powder ( add more flour if needed to make firm dough ) 5. Make into 4 logs, cut slices and place on baking tray or roll out, scape with a fork, cut as desired and decorate with 100s and 1000s. 6. Bake at 140 deg for about 15min until lightly brown.
